Maras pepper has a rich, slightly sweet and complex earthy flavor, with an aroma of dried fruit. Often used as a finishing garnish, it is especially popular in chili, couscous, dips, on egg dishes, hummus, mayo, meat dishes (kabobs, chicken, goat, lamb), pasta sauces, pizza, salads, and stew.
