Ingredients: grains of paradise

Native to the West African coast, grains of paradise have a warm peppery flavor that is followed by notes of cardamom, ginger, and a hint of citrus. Grains of paradise have a long trade history, and were commonly used in Europe as a substitute for peppercorns in the 14th and 15th centuries.

From curries to spiced wine, grains of paradise can be used in place of peppercorns when a milder heat is preferred. Add to your dried rubs, stews, and vinaigrettes, or sprinkle on top of roasted vegetables, pasta dishes, potatoes, and even apple pie.

Like peppercorns, grains of paradise can be ground in a pepper mill or crushed in a mortar and pestle, and are best ground into a powder before use.
