While cilantro refers to the leaves of the coriander plant, coriander seeds are the dried fruit from the same plant. Subtle, nutty, and slightly sweet with notes of citrus, coriander seed can be used whole our ground for both sweet and savory dishes.
Add coriander seed to your chicken, soups, stews, chili, pickle brines, and potatoes dishes. For sweet applications, coriander goes well with apples, pears, and citrus fruits. A staple in Mediterranean, Latin American, Asian, and Middle Eastern cooking, coriander pairs well with cinnamon, cumin, fennel, and ginger.
Dry-toasting whole coriander in a pan allows the spice to enhance the robust nutty aroma as the oils release from the seeds.
