This savory Mexican inspired espresso rub is not only the perfect rub for a great steak, but is also delicious on tuna and swordfish. The ground coffee and sugar caramelize beautifully into a thick crust, helping to keep your steak from drying out by holding in the natural flavors and juices.
Use one tablespoon per pound of meat. Rub meat evenly on both sides and refrigerate for half an hour before cooking.
